To prepare this recipe, start by washing the karelas, peeling them lightly if desired, and making a slit lengthwise to remove the seeds and inner pulp. Rub the karelas with salt and leave them for some time to reduce bitterness, then rinse and squeeze out excess water. In a pan, heat oil and sauté finely chopped onions until golden brown, then add ginger garlic paste and cook until fragrant. Mix in spices such as turmeric, red chili powder, coriander powder, cumin powder, salt, and a pinch of garam masala, and cook until the masala becomes dry and well roasted.
