Bhindi Masala is a delicious and homestyle curry made with fresh okra (bhindi), onions, tomatoes, and aromatic spices that create a simple yet flavorful vegetarian dish. To prepare this recipe, start by washing the okra thoroughly and drying it completely to avoid stickiness, then cut it into medium pieces. Heat oil in a pan and lightly fry the okra until it becomes slightly tender and loses its sliminess, then set it aside. In the same pan, add cumin seeds and let them splutter, followed by chopped onions which should be sautéed until golden brown. Add ginger garlic paste and cook until fragrant, then mix in chopped tomatoes along with turmeric powder, red chili powder, coriander powder, salt, and a little garam masala. Cook the masala until the tomatoes soften and the oil starts to separate. Now add the fried okra back into the pan and gently mix so it absorbs all the spices without breaking. Let it cook on low heat for a few minutes so all flavors combine well. Finish with fresh coriander leaves and serve hot Bhindi Masala with roti, paratha, or steamed rice for a comforting and flavorful meal.
