A healthy, high-protein Honey Garlic Chicken Fried Rice that is packed with flavor and perfect for meal prep. It features savory diced chicken coated in a sweet honey garlic glaze, paired with a quick and classic egg fried rice.
Chicken Marinade: Diced chicken breast, onion powder, garlic powder, black pepper, and soy sauce.
Honey Garlic Sauce: Honey, soy sauce, minced garlic, tomato sauce (ketchup), and rice vinegar.
Thickener: Cornstarch (corn flour) mixed with water.
Fried Rice: Day-old cooked white rice, frozen mixed vegetables, eggs, spring onions (scallions) – separated into white and green parts, soy sauce, and a dash of sesame oil.
Cooking: Cooking oil or spray for frying.
Marinate the Chicken:
In a bowl, toss the diced chicken breast with onion powder, garlic powder, black pepper, and a splash of soy sauce. Mix well and set aside to marinate.
Make the Fried Rice:
Heat a pan over high heat and add the frozen mixed vegetables followed by the eggs. Scramble and cook them through.
Add the chopped white parts of the spring onions, followed by the day-old cooked white rice.
Pour in a bit of soy sauce and mix everything together.
Take the pan off the heat, stir in the green parts of the spring onions and a dash of sesame oil, then set the fried rice aside.
Prepare the Honey Garlic Sauce:
In a separate bowl, whisk together the honey, soy sauce, minced garlic, tomato sauce, and rice vinegar.
Cook the Chicken & Combine:
Cook the marinated chicken in a pan over medium-to-high heat until fully cooked through.
Pour the honey garlic sauce over the chicken, followed by the cornstarch slurry (cornstarch mixed with water) to help it thicken.
Lower the heat and let it simmer for about 5 minutes until the sauce forms a rich, glossy glaze over the chicken.
Serve the honey garlic chicken right alongside or on top of the fresh fried rice!
