CHICKEN & VEGETABLE STIR FRY

Looking for a quick, healthy, and flavorful meal? 🥦🍗 This Chicken & Vegetable Stir Fry is loaded with juicy chicken, crisp vegetables, and a savory stir-fry sauce that comes together in just minutes. Perfect for a wholesome lunch or dinner!

Ingredients:

  • 500g boneless chicken breast, thinly sliced
  • 2 tbsp oil
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 1 onion, sliced
  • 2 spring onions, chopped

For the Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 2 tbsp water
  • 1 tsp cornstarch

Method:

  1. In a bowl, mix all the sauce ingredients and set aside.
  2. Heat oil in a wok or large skillet over high heat.
  3. Add the chicken and cook until lightly golden and fully cooked. Remove and set aside.
  4. In the same pan, sauté garlic and ginger until fragrant.
  5. Add broccoli, carrots, onions, and bell peppers. Stir-fry for 3–4 minutes until tender-crisp.
  6. Return the cooked chicken to the pan.
  7. Pour in the prepared sauce and toss everything together.
  8. Cook for 2–3 minutes until the sauce thickens and coats the chicken and vegetables.
  9. Garnish with spring onions and serve hot with steamed rice or noodles.
