Ingredients:

  • 300g pork loin or pork shoulder, thinly shredded
  • 200g Chinese chives, cut into 2-inch pieces
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced

For the Marinade:

  • 1 tbsp soy sauce
  • 1 tsp cornstarch
  • ½ tsp white pepper
  • 1 tsp sesame oil

For the Sauce:

  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 2 tbsp water

Method:

  1. Marinate the shredded pork with soy sauce, cornstarch, white pepper, and sesame oil for 15 minutes.
  2. Mix the sauce ingredients in a small bowl and set aside.
  3. Heat oil in a wok over high heat.
  4. Add garlic and ginger and stir-fry until fragrant.
  5. Add the marinated pork and stir-fry until cooked through and lightly browned.
  6. Add the Chinese chives and stir-fry for 1–2 minutes until just wilted.
  7. Pour in the prepared sauce and toss everything together.
  8. Cook for another minute until well coated.
  9. Serve hot with steamed rice.
