Warm, comforting, and packed with flavor! 🍜🦐 These Easy Comfort Noodles with Shrimp & Veggies combine tender shrimp, colorful vegetables, and perfectly cooked noodles in a delicious savory sauce. A quick and satisfying meal that's perfect for busy days or cozy nights at home.

Ingredients:

  • 200g noodles (egg noodles, wheat noodles, or ramen noodles)
  • 250g shrimp, peeled and deveined
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 carrot, julienned
  • 1 red bell pepper, sliced
  • 1 cup bok choy or cabbage, chopped
  • 2 spring onions, sliced

For the Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 2 tbsp water
  • ½ tsp white pepper

Method:

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a small bowl, mix all the sauce ingredients.
  3. Heat oil in a wok or large pan over medium-high heat.
  4. Add garlic and sauté until fragrant.
  5. Add the shrimp and cook for 2–3 minutes until pink and cooked through.
  6. Add the carrot, bell pepper, and bok choy. Stir-fry for 2–3 minutes.
  7. Add the cooked noodles and prepared sauce.
  8. Toss everything together until evenly coated and heated through.
  9. Garnish with spring onions and serve immediately.
