About this recipe

Ingredients:

  • 500g boneless chicken thighs, sliced
  • 2 tbsp vegetable oil
  • 2-inch piece ginger, thinly sliced
  • 6 spring onions, cut into 2-inch lengths
  • 3 cloves garlic, minced

For the Marinade:

  • 1 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • ½ tsp white pepper

For the Sauce:

  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp water
  • ½ tsp sugar

Method:

  1. Marinate the chicken with soy sauce, oyster sauce, sesame oil, cornstarch, and white pepper for 15 minutes.
  2. Mix the sauce ingredients in a small bowl and set aside.
  3. Heat oil in a wok over high heat.
  4. Add ginger and stir-fry until fragrant and lightly golden.
  5. Add garlic and cook for 30 seconds.
  6. Add the marinated chicken and stir-fry until nearly cooked through.
  7. Add the spring onions and toss for 1–2 minutes.
  8. Pour in the prepared sauce and stir-fry until the chicken is fully cooked and coated.
  9. Serve hot with steamed rice.
