Ingredients:

  • 2 large cucumbers, sliced into thick half-moons
  • 300g minced chicken, pork, or beef
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • ½ tsp sugar
  • ¼ tsp white pepper
  • 2 tbsp water
  • 2 spring onions, chopped

Method:

  1. Wash and slice the cucumbers into bite-sized pieces.
  2. Heat oil in a wok or frying pan over medium-high heat.
  3. Add garlic and ginger and stir-fry until fragrant.
  4. Add the minced meat and cook until browned and fully cooked.
  5. Stir in soy sauce, oyster sauce, sugar, white pepper, and water.
  6. Add the cucumber slices and stir-fry for 2–3 minutes, keeping them slightly crisp.
  7. Toss everything together until well coated in the sauce.
  8. Garnish with chopped spring onions.
  9. Serve hot with steamed rice.
