About this recipe
Ingredients:
- 1 whole sea bass (about 700–900g), cleaned
- 2-inch piece ginger, julienned
- 4 spring onions, sliced into thin strips
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sesame oil
- 2 tbsp hot vegetable oil
- Fresh coriander for garnish (optional)
Method:
- Clean and pat dry the sea bass. Make 2–3 shallow slashes on each side of the fish.
- Place half of the ginger inside the fish cavity and the remaining ginger on top.
- Arrange the fish on a heatproof plate suitable for steaming.
- Steam over boiling water for 8–12 minutes, depending on the size of the fish, until fully cooked.
- Carefully remove any excess liquid from the plate.
- Scatter the spring onions over the fish.
- Mix soy sauce, oyster sauce, and sesame oil, then pour over the fish.
- Heat the vegetable oil until very hot and carefully pour it over the spring onions and fish to release their aroma.
- Garnish with fresh coriander and serve immediately with steamed rice.
