Ingredients

Part 1 – Preparing Chicken

  • 250g boneless chicken
  • Β½ tsp salt
  • Β½ tsp black pepper powder
  • 1 egg
  • ΒΌ cup cornflour
  • Oil for deep frying

Part 2 – Manchurian Gravy

  • ΒΌ cup oil
  • ΒΌ cup finely chopped garlic
  • ΒΌ cup finely chopped ginger
  • ΒΌ cup finely chopped green chillies
  • 500ml water
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp chicken powder
  • Β½ tbsp oyster sauce
  • Cornflour slurry (2 tbsp cornflour + 2 tbsp water)
  • Chopped spring onion greens for garnish

Method

  1. In a bowl, combine chicken, salt, black pepper, egg, and cornflour. Mix well until the chicken is evenly coated.
  2. Heat oil and deep fry the chicken until light golden brown. Remove and set aside.
  3. In a wok, heat oil and sautΓ© the garlic for 1 minute.
  4. Add ginger and cook for another minute.
  5. Add green chillies and stir-fry for 1 minute.
  6. Pour in the water and bring to a boil.
  7. Add soy sauce, salt, sugar, chicken powder, and oyster sauce. Mix well.
  8. Add the cornflour slurry and keep stirring until the gravy thickens.
  9. Add the fried chicken and cook for 2 minutes.
  10. Garnish with chopped spring onion greens and serve hot.
