Ingredients:

  • 500g chicken thighs or drumsticks
  • 2 tbsp vegetable oil
  • 4 cloves garlic, smashed
  • 1-inch ginger, sliced
  • 2 spring onions, cut into sections
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sugar
  • 1½ cups water or chicken stock
  • 1 star anise (optional)
  • Salt and pepper to taste

Method:

  1. Heat oil in a deep pan or wok over medium heat.
  2. Add garlic, ginger, and spring onions. Sauté until fragrant.
  3. Add the chicken pieces and cook until lightly browned on all sides.
  4. Stir in light soy sauce, dark soy sauce, oyster sauce, and sugar.
  5. Add water or chicken stock and mix well.
  6. Add star anise if using and bring to a gentle boil.
  7. Cover and simmer for 25–30 minutes until the chicken is tender and fully cooked.
  8. Remove the lid and simmer for a few more minutes to slightly reduce the sauce.
  9. Serve hot with steamed rice and vegetables.
