Ingredients:

  • 4 eggs, beaten
  • 3 large tomatoes, cut into wedges
  • 2 tbsp oil
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 2 tbsp water
  • Salt and pepper to taste
  • 2 spring onions, chopped

Method:

  1. Beat the eggs in a bowl and season lightly with salt.
  2. Heat 1 tbsp oil in a wok or pan and scramble the eggs until just set. Remove and set aside.
  3. Add the remaining oil and sauté the garlic until fragrant.
  4. Add the tomatoes and cook for 2–3 minutes until they begin to soften.
  5. Stir in soy sauce, sugar, water, salt, and pepper.
  6. Return the scrambled eggs to the pan and gently mix with the tomatoes.
  7. Cook for another minute until everything is well combined.
  8. Garnish with chopped spring onions.
  9. Serve hot with steamed rice.
