About this recipe
Ingredients:
- 2 large potatoes, peeled and shredded
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 2 dried red chilies, sliced
- 1 green chili, sliced (optional)
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- ½ tsp sugar
- Salt to taste
- 1 spring onion, chopped
Method:
- Peel and shred the potatoes into thin strips.
- Soak the shredded potatoes in cold water for 10 minutes to remove excess starch, then drain well.
- Heat oil in a wok or large pan over high heat.
- Add garlic and chilies and stir-fry until fragrant.
- Add the shredded potatoes and stir-fry for 3ā5 minutes, keeping them slightly crisp.
- Add rice vinegar, soy sauce, sugar, and salt. Toss well to coat.
- Continue stir-frying for another minute.
- Garnish with chopped spring onions.
- Serve hot as a side dish with rice, noodles, or your favorite Chinese meal.
