Ingredients:

  • 2 large potatoes, peeled and shredded
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 2 dried red chilies, sliced
  • 1 green chili, sliced (optional)
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • ½ tsp sugar
  • Salt to taste
  • 1 spring onion, chopped

Method:

  1. Peel and shred the potatoes into thin strips.
  2. Soak the shredded potatoes in cold water for 10 minutes to remove excess starch, then drain well.
  3. Heat oil in a wok or large pan over high heat.
  4. Add garlic and chilies and stir-fry until fragrant.
  5. Add the shredded potatoes and stir-fry for 3–5 minutes, keeping them slightly crisp.
  6. Add rice vinegar, soy sauce, sugar, and salt. Toss well to coat.
  7. Continue stir-frying for another minute.
  8. Garnish with chopped spring onions.
  9. Serve hot as a side dish with rice, noodles, or your favorite Chinese meal.
